Minestrone Soup - cooking recipe
Ingredients

1/3 c. oil
1 lb. beef stew meat
flour
3/4 c. chopped onion
1 c. chopped celery
1 1/2 qt. water
1/2 c. diced tomato
1/2 c. shredded cabbage
1/4 c. minced parsley
1/2 c. sliced carrots
1/4 tsp. minced garlic
1/2 c. cracked wheat
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano
1 pkg. frozen peas
1/2 can kidney beans
1 c. sliced zucchini
grated Parmesan cheese
Preparation

Roll beef stew meat in flour and brown in oil.
Add onion and saute.
Add celery and water.
Cover; simmer slowly until meat is tender (about 3 hours).
Add tomato, cabbage, parsley, carrots and garlic.
Cover and cook 15 minutes.
Add wheat, salt, pepper, oregano, peas, beans and zucchini.
Cover and cook 15 to 20 minutes.
Sprinkle each serving with cheese.
