Mexican Fried Rice - cooking recipe

Ingredients
    1 c. raw rice
    1/4 c. oil
    1 Tbsp. chili powder
    2 c. water
    1 tsp. salt
Preparation
    Fry the rice in oil in a large skillet (cast-iron, if available) until medium brown; frequent stirring will be necessary. Cool somewhat.
    Add water, chili and salt.
    Cover and simmer 20 to 25 minutes until rice absorbs water.
    Serve hot.
    May be refrigerated and reheated.
