Cheese Cache Chicken - cooking recipe

Ingredients
    2 whole chicken breasts, skinned, boned and halved
    4 pieces Monterey Jack cheese (1/4-inch thick and 1 1/2 x 3-inches long)
    4 sprigs fresh sage or 1/2 tsp. dried
    2 eggs
    1 tsp. grated Parmesan cheese
    1/4 tsp. salt
    1/4 tsp. pepper
    1 Tbsp. minced parsley
    flour
    1/4 c. clarified butter or oil
    parsley (garnish)
    lemon wedge (garnish)
Preparation
    Cut pocket in each chicken breast (do not cut through).
    Place strip of cheese and a sprig of sage in each pocket.
    Chill.
