Pickled Mushrooms - cooking recipe

Ingredients
    1 lb. mushrooms
    2 tsp. salt
    2/3 c. salad oil (olive and canola)
    1/2 c. sliced celery
    2 Tbsp. sliced green olives
    2 Tbsp. sliced ripe olives
    2 Tbsp. lemon juice or more to taste
    1 Tbsp. capers (can use more)
    1 Tbsp. parsley
    1 Tbsp. wine vinegar
    1 clove garlic, split
Preparation
    Cook mushrooms in 1 inch of water with 1 teaspoon of salt for 5 minutes.
    Cool mushrooms before adding other ingredients.
    Place in refrigerator at least 24 hours.
    Turn jar frequently to marinate.
    May want to double recipe; it goes fast!
