Ingredients

1/2 c. sugar
3 Tbsp. cornstarch
1/4 tsp. salt
2 c. milk
3 slightly beaten egg yolks
2 Tbsp. butter
1 tsp. vanilla
3 egg whites
1/4 tsp. cream of tartar
6 Tbsp. sugar
1 c. coconut
Preparation

Mix together 1/2 cup sugar, cornstarch, salt and 1/2 cup milk until smooth.
Stir in remaining milk.
Microwave on High for 8 minutes or until thickened.
Stir occasionally the last half of cooking.
Beat a little of the hot mixture into the beaten egg yolks; then add the egg yolk mixture to the remaining hot mixture. Microwave on High for 1 1/2 to 2 minutes or until thickened.
Blend in butter, vanilla and coconut.
Pour into cooled, baked pastry shell.
