Ratatouille - cooking recipe
Ingredients

1 large onion, chopped
1/4 c. olive oil
2 zucchini, cut in 1/4-inch slices
2 medium garlic cloves, minced
2 large green peppers, sliced
1 eggplant, peeled and cubed
4 tomatoes, peeled, seeded and chopped
1/8 tsp. basil
1/8 tsp. oregano
Preparation

Saute onion in olive oil until transparent (do not brown). Add remaining ingredients.
Cover and cook over medium heat for 45 minutes, stirring occasionally.
Add some water if needed.
For serving, you can top this with ripe olives, sliced crumbled bacon, or grated Parmesan.
Delicious hot, but also good cold.
