Eggplant Casserole - cooking recipe
Ingredients

1 large or 2 small eggplants, peeled and diced
1/2 tsp. salt
1/4 tsp. black pepper
1/2 c. chopped onion
bacon grease
2 cans tomatoes
2 c. cornbread crumbs
1 c. grated cheese
Preparation

Peel and dice eggplant.
Cook in water until tender; drain. Mash eggplant with potato masher and add salt and black pepper.
