Pinon De Amarillos - cooking recipe
Ingredients

1 lb. ground beef
6 yellow plantains
8 oz. green beans, cooked
8 oz. Cheddar cheese, finely cut or grated
3 eggs, separated
2 Tbsp. oil
1 medium onion, chopped
1 green pepper, chopped
2 cloves garlic
2 red peppers, chopped
3 leaves coriander, ground
1 leaf cilantro
1 packet sazon with saffron
4 oz. raisins (optional)
2 Tbsp. tomato sauce
2 Tbsp. sugar
salt and pepper
Preparation

Stir-fry garlic in oil.
Add peppers, onion, coriander, cilantro, tomato sauce and sazon.
Add meat and season well; cook 30 minutes, stirring occasionally.
Fry plantains, cut in pieces. Grease an 8 x 12 x 2-inch pan and place plantains in bottom.
Add meat mixture, spread evenly and press down.
Add grated cheese, then green beans.
Make another layer of plantains.
Beat egg whites; add yolks to sugar.
Cover the dish with this meringue. Bake at 325\u00b0 for 15 minutes.
To brown, place under broiler for 5 minutes.
Cut and eat.
Makes about 10 portions.
