Coconut Topped Oatmeal Cake - cooking recipe
Ingredients

1 1/4 c. boiling water
1 c. quick cooking oats
1 1/2 c. all-purpose flour
1/2 c. margarine
1 c. white sugar
1 c. brown sugar
2 eggs
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. baking powder
1 tsp. salt
Preparation

Pour boiling water over oats and set aside.
Mix flour with soda, cinnamon, baking powder and salt.
Cream margarine. Gradually add white and brown sugar, blending until mixture is mealy.
Add eggs, one at a time, beating until light and fluffy. Stir in oats, then flour mixture and blend thoroughly.
Bake at 325\u00b0 to 350\u00b0 for 30 to 40 minutes in a 9 x 13-inch greased and floured pan.
