Lemon Pie - cooking recipe

Ingredients
    2 large eggs
    3 large egg yolks
    3/4 c. sugar
    1/2 c. lemon juice
    1 Tbsp. lemon rind
    1/2 pt. heavy cream
    1 pkg. unflavored gelatin
    1/4 c. water
    baked pie shell
Preparation
    Whisk first 5 ingredients in saucepan.
    Cook, stirring constantly, 10 minutes.
    Heat gelatin and water over low heat until gelatin dissolves.
    Stir into cooled lemon mix.
    Whip heavy cream and fold into mixture.
    Pour into baked pie shell and refrigerate.
    Decorate with crystallized pansies.
