Split Pea Soup - cooking recipe

Ingredients
    8 c. water
    1 lb. dried split peas
    1 lb. ham without bone in or 2 lb. smoked ham
    1 medium onion (1/2 c.)
    1 tsp. salt
    1/4 Tbsp. pepper
    2 medium carrots, cut in 1/2-inch pieces
    2 medium stalks celery, cut in 1/2-inch pieces
Preparation
    Boil peas for 2 minutes; remove from heat and let stand 1 hour.
    Rinse well.
    Add to peas, ham, onion, salt and pepper. Cover and simmer 1 hour or until done.
    Cut ham from bone and simmer until vegetables are done (45 minutes).
