Black Bean And Rice Bake - cooking recipe

Ingredients
    2 tsp. olive oil
    1 1/2 c. chopped onion
    3 garlic cloves, minced
    1/2 c. chopped red bell pepper
    1 (4 oz.) can diced green chiles
    1 c. crushed, drained canned tomatoes
    1 Tbsp. lime juice
    1 1/2 to 2 tsp. chili powder
    3/4 tsp. salt
    16 oz. drained, cooked black beans
    2 c. cooked brown rice
    4 oz. Cheddar or Jack cheese
Preparation
    Preheat
    oven
    to
    350\u00b0.
    Heat\toil
    in
    heavy,
    large, nonstick
    skillet
    over
    medium
    heat.
    Add
    onion and garlic; saute 8
    to 10 minutes until tender.
    Add bell pepper; saute 3 minutes.
    Stir in tomatoes, lime juice, chili powder and salt; bring to
    a boil.
    In a 2-quart casserole, mix beans and rice. Pour in
    tomato
    mixture and stir to combine.
    Sprinkle casserole with cheese.
    Bake 10 to 15 minutes until hot and bubbly. Healthy. Makes 4 servings.
