Ratatouille(Pronounced Rah-Tah-Too-Ee) - cooking recipe

Ingredients
    1/4 c. olive oil
    2 medium yellow squash
    1 medium eggplant
    1 medium zucchini
    1/2 tsp. pepper
    1 c. chopped onion
    1 Tbsp. dill seed
    1 tsp. minced garlic
    1 tsp. salt
    1 medium tomato, diced
Preparation
    Cut unpeeled eggplant, squash and zucchini into 3/4-inch pieces.
    Heat oil in large skillet over medium heat.
    Add squash, eggplant, zucchini and onion.
    Cook 5 to 7 minutes or until vegetables are almost tender, stirring frequently.
    Add seasonings.
    Continue cooking, stirring frequently, 1 minute or until vegetables are tender.
    Sprinkle with tomato.
    Makes 8 servings.
