Lemon Flounder Roll-Ups - cooking recipe

Ingredients
    1 c. cooked rice
    1/3 c. margarine
    1/3 c. lemon juice
    2 tsp. salt
    1/4 tsp. pepper
    1 (10 oz.) pkg. frozen, chopped broccoli, thawed
    1 c. shredded sharp Cheddar cheese
    8 flounder fillets, fresh or thawed
    paprika
Preparation
    Preheat oven to 375\u00b0.
    In small saucepan, melt butter.
    Stir in lemon juice, salt and pepper.
    In medium bowl, combine rice, broccoli and 1/4 cup of sauce mixture; mix well.
    Divide broccoli mixture among fillets.
    Roll up and place seam side down in baking dish.
    Bake 25 minutes.
    Spoon remaining sauce on individual servings.
    Garnish with paprika.
