Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, cooked until tender (little water)
    1 can tomatoes, mashed
    1 medium onion, chopped
    part of bell pepper, chopped
    1 c. cornbread crumbs
    1 egg
    grated cheese
Preparation
    Cook onion and bell pepper in bacon grease until tender. Combine with eggplant, tomatoes, cornbread and egg.
    Grate cheese on top.
    Bake 30 to 45 minutes at 350\u00b0.
