Rice Rancheros - cooking recipe

Ingredients
    1 c. chopped onion
    4 Tbsp. margarine
    4 c. cooked brown rice
    2 c. sour cream
    1 bay leaf
    salt and pepper
    2 (4 oz.) cans green chilies
    2 c. grated Cheddar cheese
    1 c. cottage cheese
Preparation
    Saute onion and butter; add rice, sour cream, cottage cheese, bay leaf, salt and pepper.
    Mix together and put in 9 x 13-inch casserole dish.
    Layer rice, green chilies and cheese.
    Reserve 1/3 cup cheese, end with rice layer.
    Bake at 375\u00b0 for 20 minutes. Sprinkle remaining cheese in, then bake 20 minutes longer.
