Spanish Rice - cooking recipe

Ingredients
    2 Tbsp. butter or bacon fat
    1 large onion
    1 qt. diced tomatoes
    1 c. uncooked rice
    1/2 tsp. salt
    1/4 tsp. pepper
    1 large green sweet pepper
Preparation
    Melt butter in frying pan.
    Add peeled onion and thinly sliced pepper.
    Cook over low flame 5 minutes.
    Add tomatoes and cook slowly for 1 hour.
    After the rice absorbs the moisture, stir to prevent burning.
