Hot Salsa (Ciordia) - cooking recipe

Ingredients
    2 c. jalapeno peppers, chopped
    3 c. onions, chopped
    1 1/2 c. distilled vinegar
    6 c. canned tomatoes, drained
    14 c. tomato sauce
    8 cloves garlic
    1 Tbsp. sugar
    2 Tbsp. salt
    2 Tbsp. oregano
    2 tsp. black pepper
    1 tsp. basil
    2 tsp. cilantro
    1 tsp. cumin
Preparation
    Place jalapenos, onions and vinegar in large nonaluminum pan. Simmer, partly covered, until soft.
    Add remaining ingredients. Simmer about 40 minutes, until thickened and well-seasoned.
    Pack into jars and seal.
    Process in boiling water bath 35 minutes. Yields 22 cups.
