Jambalaya - cooking recipe

Ingredients
    1 c. diced onion
    1 green bell pepper, diced
    1 red bell pepper, diced
    5 stalks celery, diced
    1/4 stick oleo
    3 Tbsp. olive oil
    1 (8 oz.) can whole tomatoes
    1 (8 oz. ) can stewed tomatoes
    1 (8 oz.) can whole kernel corn
    1 (8 oz.) can okra, sliced
    2 c. ham diced or 2 c. chicken, diced
    1 lb. shrimp, cleaned
    6 c. cooked rice (more if needed)
Preparation
    In large frying pan (with lid), saute onion, green and red pepper and diced celery in hot olive oil/oleo mixture, until soft. Add tomatoes, corn, okra, diced ham and/or chicken.
    Simmer 20 minutes.
    add shrimp; simmer 7 minutes.
    Test shrimp for doneness.
