Coconut Pie - cooking recipe

Ingredients
    2 c milk
    1 1/4 c sugar
    6 Tbsp cornstarch
    1 tsp salt
    2 eggs
    1/2 c coconut
    1/4 tsp vanilla
    baked pie shell
    whipped cream
Preparation
    Heat milk in a double boiler until hot.
    Do not boil.
    Combine sugar cornstarch and salt in a mixing bowl.
    Add hot milk, beat for 1 minute or until smooth.
    Add eggs and mix will.
    Pour mixture back into double boiler.
    Stir occasionally until mixture begins to coat the sides of the pan, then stir constantly until thick.
    Place in mixer bowl and add coconut and vanilla.
    Beat on medium speed until cool.
    Pour into pie shell and top with whipped cream. Refrigerate.
