Pineapple Chicken Stir-Fry - cooking recipe
Ingredients

1/4 c. soy sauce
1/2 tsp. ground ginger
4 chicken breasts, skinned, halved and boned
1 lb. fresh broccoli florets
1 large carrot, sliced
2 Tbsp. cornstarch
1 Tbsp. vegetable oil
1 can unsweetened pineapple chunks, undrained
hot cooked rice
Preparation

Combine soy sauce, cornstarch and ginger.
Pour oil in wok and heat for 1 minute.
Add chicken.
Cook for 2 to 3 minutes.
Add vegetables and pineapple.
Cover and cook for 3 to 4 minutes or until vegetables are tender.
Add soy sauce mixture and cook until sauce is bubbly and thickens.
Serve over rice.
