Curried Zucchini Soup - cooking recipe
Ingredients

2 Tbsp. butter
1 medium onion, chopped
1 Delicious apple, peeled, cored and diced
2 tsp. curry powder
32 oz. chicken stock
1/4 c. rice
2 c. diced zucchini
1/2 tsp. salt
1 c. milk
Preparation

Cook onion and apple in butter until soft. Add curry and stir 4 to 5 seconds. Add chicken stock; bring to a boil. Add rice, diced zucchini and salt; cook until soft. Put through a food processor and then add milk.
Serve hot or cold with croutons or slivered almonds.
Serves 6.
