Fat-Free Carrot Muffins - cooking recipe

Ingredients
    2 1/4 c. flour
    1/2 c. sugar
    1 tsp. cinnamon
    1 tsp. salt
    1 tsp. baking soda
    1/2 tsp. baking powder
    1/4 tsp. ginger
    1 1/2 c. finely shredded carrots (3 medium)
    8 oz. vanilla yogurt (non-fat)
    1/2 c. thawed, frozen no-fat egg substitute
    1/2 c. unsweetened applesauce
    1/2 c. raisins
    1/3 c. packed light brown sugar
    1 tsp. vanilla
Preparation
    Combine ingredients.
    With spoon, stir flour mixture into carrot mixture, just until flour is moistened.
    Spoon batter into muffin tins, which have been sprayed with nonstick cooking spray. Bake 20 to 30 minutes at 350\u00b0 until toothpick comes out clean.
