Guacamole Tomato Salad - cooking recipe
Ingredients

6 medium tomatoes, peeled
2 tsp. salt
1 medium onion, chopped finely
2 tsp. lemon juice
1 or 2 cans medium green chilies, chopped fine
2 very ripe medium avocados
3 crisp slices bacon
6 lettuce leaves
Preparation

Core tomatoes; scoop out center.
Sprinkle insides with 1/2 teaspoon salt.
Turn over to drain.
Chill.
Chop tomato centers fine.
Add onion, chilies, lemon juice and salt.
Mix. Just before serving, mash avocado and blend into tomato mixture.
Fill tomato cups.
Top with crumbled bacon.
Serve on lettuce leaves.
