Ingredients

1/2 c. soft butter
1/4 c. sugar
1 1/2 c. flour
1 can drained pineapple
1/4 c. sugar
1 Tbsp. melted butter
1 1/2 c. coconut, shredded
1 egg, beaten
Preparation

Mix first 3 ingredients with fork or pastry blender, then knead with hands until soft dough.
Press dough into 9 x 9 x 2-inch pan and up the sides about 1/2-inch.
Prick with fork. Bake at 350\u00b0 for 15 minutes.
Remove from oven and spread pineapple over crust.
Mix sugar, egg, melted butter and coconut. Spread over the pineapple and bake at 350\u00b0 for 20 minutes.
Cool and cut into squares.
