Potatoes Basque Style - cooking recipe

Ingredients
    1/2 c. chopped onion
    1 crushed garlic clove
    2 Tbsp. olive oil
    1/4 c. chopped parsley
    1/4 c. chopped pimento
    1 c. chicken broth
    6 medium potatoes, thinly sliced
    ground black pepper
Preparation
    Saute onion and garlic in olive oil until soft.
    Stir in parsley, pimento, pepper and broth.
    Remove from heat.
    Layer sliced potatoes in broth in skillet.
    Bring to a boil.
    Reduce heat, cover and simmer about 20 minutes until potatoes are soft. Lift potatoes with slotted spoon onto heated serving dish.
    Pour liquid over potatoes.
