Ingredients

2 eggs
1 (13 oz.) can evaporated milk
3/4 c. water
3/4 c. seedless raisins
1/2 c. sugar
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. ground cinnamon
3 c. cooked rice
Preparation

Combine eggs, milk, raisins, water, sugar, vanilla, salt and cinnamon in a 2-quart casserole dish.
Stir in rice.
Cover with plastic wrap.
Microwave at High 2 minutes; stir well.
Rotate dish 1/2 turn.
Cover; microwave at Medium-low 10 minutes; stir well.
Rotate dish 1/2 turn.
Cover; microwave at Medium-low 8 to 10 minutes.
Let stand, covered, for 5 to 10 minutes before serving.
Serves 6 to 8.
