Weight Watcher'S Chocolate-Mint Parfaits - cooking recipe

Ingredients
    1/4 c. plus 2 Tbsp. water
    3 Tbsp. sugar
    2 Tbsp. unsweetened cocoa
    1 1/2 tsp. cornstarch
    1/4 tsp. mint flavoring
    2 c. vanilla ice milk
    1 Tbsp. plus 1 tsp. finely chopped pecans, toasted
    fresh mint sprigs (optional)
Preparation
    Combine first 4 ingredients in a medium saucepan; stir well. Cook over medium heat 8 to 10 minutes, stirring constantly, until smooth and thickened.
    Remove sauce from heat and stir in mint flavoring.
    Spoon 1/4 cup ice milk into each of 4 parfait glasses. Top each with 1 tablespoon chocolate sauce.
    Repeat procedure with remaining ice milk and chocolate sauce.
    Sprinkle 1 teaspoon chopped pecans over each serving.
    Garnish with fresh mint sprigs, if desired.
    Serve immediately.
    Yields 4 servings with about 156 calories per serving.
