Creole Pork Chops - cooking recipe

Ingredients
    5 or 6 pork chops, 3/4-inch thick
    1 bell pepper
    1 medium onion
    Tex-Joy or Tony's Cajun seasoning to taste
    1 can Ro-Tel or stewed tomatoes
    1 1/2 c. raw or leftover rice
    2 Tbsp. oil
Preparation
    Put oil in iron skillet and brown seasoned pork chops.
    Drain oil and return chops to skillet.
    Add raw or cooked rice on top of pork chops.
    Chop bell pepper and onion on the rice.
    Pour can of tomatoes on top.
    Put a lid on the skillet and simmer until chops are fork-tender.
    Serve hot and enjoy.
