Pasta Cohen - cooking recipe

Ingredients
    1/4 c. olive oil
    2 shallots, chopped
    1 c. fresh mushrooms, soaked in 1 c. water for 10 minutes
    1/4 c. dry sherry
    1 c. heavy cream
    2 c. tomato sauce
    1/4 c. fresh basil
    salt and pepper
    Parmesan cheese
Preparation
    Saute shallots and olive oil until transparent. Add mushrooms, sherry, cream, tomato sauce and basil; stir. Simmer for 1/2 hour. Pour over pasta.
