Grated Carrots With Apricots - cooking recipe

Ingredients
    5 Tbsp. butter
    1 medium onion, cut in strips
    1 lb. carrots, shredded
    4 oz. dried apricots
    1/2 c. stock (water)
    2 tsp. dry sherry
Preparation
    Melt butter; add onion and saute.
    Add apricots and carrots; stir-fry 2 minutes.
    Add water and cook about 5 minutes or until liquid is absorbed.
    Add sherry, salt and pepper.
