Tabboula - cooking recipe

Ingredients
    2 c. coarse cracked wheat
    3/4 c. lemon juice
    1 c. olive oil
    pepper
    2 tomatoes, chopped
    1 tsp. salt
    1/2 c. parsley, minced
    1/4 c. mint, minced
    1/2 c. scallions, chopped
Preparation
    In a large earthenware casserole with a lid, put the cracked wheat and salt.
    Cover the boiling water and put the lid on while you prepare the other ingredients; leave covered for 3/4 of an hour.
    Drain off excess water and toss wheat with other well prepared ingredients.
    Leave it to marinate for an hour.
