Stuffed Baked Salmon - cooking recipe

Ingredients
    1/3 c. oleo
    1/3 c. chopped onion
    1 Tbsp. grated lemon rind
    1/4 c. lemon juice
    1 c. diced celery
    3 c. cooked rice
    1/2 tsp. salt
    1/4 tsp. thyme
Preparation
    Melt butter in pan; saute celery and onion until tender, then toss with rice, lemon rind, salt, thyme and lemon juice.
    This is enough to stuff a large salmon.
    Sprinkle inside of fish with salt; stuff fish.
    Spray foil and wrap fish in foil.
    Prick holes in bottom.
    Measure at thickest part of fish and bake in 450\u00b0 oven, allowing 10 minutes cooking time for each inch of stuffed thickness.
    Serve with lemon slice.
