Low Calorie Sweet Potato Muffins - cooking recipe
Ingredients

3/4 c. all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. ground cinnamon
6 oz. cooked and peeled sweet potatoes
1/4 c. maple syrup
1 egg, beaten
2 Tbsp. vegetable oil
dash of ground nutmeg (optional)
Preparation

Spray muffin pan with nonstick cooking spray; set aside. Preheat oven to 400\u00b0.
In medium bowl, combine flour, baking powder and spices.
In small bowl, combine remaining ingredients, mixing until egg is thoroughly combined.
Stir into dry ingredients until moistened.
Fill each prepared cup with an equal amount of batter.
Bake for 20 to 25 minutes, until muffins are golden brown.
Makes 6 servings.
