Italian Rice Salad - cooking recipe

Ingredients
    12 oz. (2 c.) Mozzarella cheese, cubed
    2 medium ripe tomatoes, seeded and sliced (1 1/2 c.)
    2 c. warm cooked long grain white rice (2/3 c. raw)
    1/4 c. sliced black olives (about 8)
    2 to 3 oz. pepperoni slices *
    3 Tbsp. chopped fresh parsley
    1/2 c. bottled Italian dressing
    romaine lettuce leaves (optional)
Preparation
    Put all ingredients except romaine lettuce in large bowl; toss to coat.
    Let stand 1 hour or more to blend flavors.
    Serve on lettuce, if desired.
    Makes 4 main-dish servings.
