Venison (Or Beef) Steak And Gravy - cooking recipe

Ingredients
    1 c. flour
    1/2 c. lard
    2 c. water (more or less)
    salt and pepper
    1 lb. venison steak
Preparation
    Trim fat.
    Sprinkle meat with salt and pepper.
    Dredge in flour.
    Fry at medium heat until brown.
    Remove steak and leave about 5 tablespoons fat in pan.
    Add 3 tablespoons remaining flour and brown.
    Add water and bring to a boil.
    Cut heat down and put steak back into gravy; cover and simmer until tender.
    Serve with rice or mashed potatoes.
