Blintz Casserole - cooking recipe

2 eggs
3 tsp. baking powder
1/4 c. milk
1/2 c. sugar
1 c. flour
1 tsp. vanilla
1 pinch salt
1 lb. farmer's cheese
1/2 lb. cream cheese
juice of 1 lemon
1/4 to 1/2 c. sugar
2 eggs
1/2 lb. Ricotta or cottage cheese
salt to taste
Preparation

First make the dough:
Melt 1 stick (1/4 pound) margarine in a 2-quart casserole.
Allow melted margarine to coat pan and pour balance into remaining dough ingredients in mixing bowl:
2 eggs, baking powder, milk, 1/2 cup sugar, flour, vanilla and salt; mix all together and set aside.
