Esperregado - cooking recipe

Ingredients
    2 bunches spinach or turnip greens
    1/2 c. water
    1 Tbsp. butter
    1/2 Tbsp. flour
    salt and pepper to taste
Preparation
    Wash and chop greens.
    Bring water and a pinch of salt to boil.
    Add greens and cook until tender.
    Drain and squeeze all the water out.
    In a frying pan melt butter.
    Add flour, salt and pepper.
    Stir; add greens and mix well for about 1 minute.
    Serve hot with meat or fish dishes.
