Buck-A-Roo Beef Skillet - cooking recipe
Ingredients

1 lb. ground beef
3/4 c. chopped onion
1 (16 oz.) can tomatoes, cut up
1 (15 1/2 oz.) can red kidney beans
1/2 c. quick-cooking rice
3 Tbsp. chopped green pepper
1 1/2 tsp. chili powder
1/2 tsp. garlic salt
3/4 c. shredded mild Cheddar
corn chips, crushed
Preparation

In skillet, cook ground beef and onion until meat is browned and onion is tender.
Drain fat.
Stir in undrained can of tomatoes, undrained kidney beans, uncooked rice, green pepper, chili powder, garlic salt, 1/2 cup water and 1/2 teaspoon salt. Bring to boiling; reduce heat.
Simmer, covered, 20 minutes, stirring occasionally.
Top with cheese.
Cover and heat until cheese melts.
Top with chips around edge.
