Caribbean Pineapple Ginger Cooler - cooking recipe

Ingredients
    6 c. water
    3 1/2 lb. fresh pineapple, cut into small pieces (including peel and core)
    1 oz. fresh ginger root, peeled and grated (about 2 Tbsp.)
    2/3 c. sugar (or to taste)
    juice from 1 lime (or to taste)
    6 lime slices (for garnish)
Preparation
    In large saucepan, bring water to boil; add pineapple and gingerroot and let mixture cool to room temperature, tightly covered.
    (The mixture may be left to steep overnight).
