Salami - cooking recipe

Ingredients
    5 lb. ground beef
    4 Tbsp. Tender Quick curing salt
    2 1/2 tsp. coarse pepper
    1 1/2 tsp. mustard seed
    4 tsp. liquid smoke
    1 to 2 tsp. garlic salt (as desired)
Preparation
    Mix all ingredients together and knead as for bread for 5 minutes.
    Knead each day for 3 days.
    On the 4th day, shape into long logs, approximately 3 rolls each recipe.
    Place on a jelly roll (or shallow) pan.
    Bake 8 hours at 125\u00b0.
    Turn once after 4 hours.
    Cool and refrigerate.
    Best if placed on a wire rack in pan when baked.
