Sicilian Meat Loaf - cooking recipe

Ingredients
    2 beaten eggs
    3/4 c. soft bread crumbs
    1/2 c. tomato juice
    2 Tbsp. parsley
    1/2 tsp. dried oregano
    1/4 tsp. salt
    1/4 tsp. pepper
    1 clove garlic, minced
    2 lb. ground beef
    8 thin slices ham
    6 oz. Mozzarella cheese, shredded or 8 slices
    slices of cheese for top, if desired
Preparation
    Combine first 9 ingredients on waxed paper or foil; pat the meat mixture to form a 10 x 12-inch rectangle.
    Arrange ham and cheese on top of meat mixture, leaving 1/2-inch margin all around. Roll up jellyroll style.
    Place meat, seam side down, in pan. Bake at 350\u00b0 for 1 1/4 hours; add cheese slices if desired on the top.
    Bake 5 more minutes.
