Moussaka(Easy Greek Casserole) - cooking recipe

Ingredients
    1 medium eggplant, cubed
    2 eggs, slightly beaten
    1 c. dry bread crumbs
    1 1/2 c. onion, chopped
    1 can cream of mushroom soup
    1 c. shredded Swiss cheese
    1 lb. ground lamb or beef
    2 Tbsp. parsley, chopped
    salt to taste
    black pepper
    olive oil
    2 egg yolks, well beaten
    1 can tomato soup
Preparation
    Dip eggplant in slightly beaten egg and then in bread crumbs. Brown in olive oil.
    Set aside.
