Rabbit Salmi - cooking recipe
Ingredients

1 rabbit
1 small onion, sliced
1 stalk celery, diced
2 bay leaves
2 Tbsp. cooking oil
2 Tbsp. fat
2 Tbsp. flour
2 c. hot water
1 tsp. salt
1 Tbsp. capers
1 Tbsp. Worcestershire
12 pitted olives
chopped parsley
Preparation

Place rabbit in baking pan and add onion, celery and bay leaves.
Brush with oil and roast in 350\u00b0 oven for 45 minutes. Remove meat from pan, add fat and flour and stir until sauce becomes a rich brown.
Add hot water, stir well.
When smooth, add salt, Worcestershire sauce, capers and olives.
Replace meat, cover tightly and roast in 350\u00b0 oven for an additional 80 minutes or until tender.
