Cajun-Style Rice Salad - cooking recipe

Ingredients
    2 c. cooked rice
    1 medium green pepper, chopped
    4 1/2 oz. cooked shrimp, rinsed and drained
    1/2 c. sliced fresh mushrooms
    1 hard-cooked egg, finely chopped
    2 Tbsp. snipped parsley
    1/4 c. salad oil
    1/4 c. vinegar
    1/4 c. water
    2 tsp. paprika
    2 tsp. prepared horseradish
    1/2 tsp. onion salt
    1/8 tsp. ground red pepper
    6 lettuce leaves
Preparation
    In a mixing bowl, gently stir together rice, green pepper, shrimp, mushrooms, hard-cooked egg and parsley.
    Set aside.
