Pork Roast - cooking recipe

Ingredients
    1/2 c. Dijon mustard
    2 Tbsp. soy sauce
    1 Tbsp. olive oil
    4 garlic cloves, minced
    1 tsp dried thyme
    1 boneless pork loin roast
    1 tsp salt
    1/4 tsp pepper
    1 1/2 c. white wine
Preparation
    In a small bowl combine mustard, soy sauce, oil, garlic and thyme.
    Rub over roast.
    Refrigerate, turning occasionally.
    Place roast on a rack in a shallow roasting pan.
    Sprinkle with salt and pepper.
    Pour wine into the pan.
    Bake uncovered at 325\u00b0F for about 2 1/2 hours, until meat thermometer reads 160\u00b0, basting with pan juices every 30 minutes.
    Before slicing let stand for 10 minutes.
    Serve over mashed potatoes with green lettuce.
