Fish Florentine - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen leaf spinach
    4 fish fillets
    1/3 c. dry bread crumbs
    1/4 tsp. basil
    2 Tbsp. oil or nonstick cooking spray
    1/2 c. shredded nonfat Mozzarella-type cheese
Preparation
    Cook spinach as directed on package.
    In a small bowl, combine bread crumbs and basil.
    Coat fillets with crumb mixture, pressing firmly.
    In a large skillet, heat oil or spray with nonstick spray.
    Brown fish on both sides.
    Spoon cooked spinach evenly onto fish fillets and sprinkle cheese over top.
    Cover and cook over low heat until cheese is melted.
    Yield:
    4 servings.
