Rhubarb Delight - cooking recipe

Ingredients
    3 c. sliced rhubarb
    1/3 c. quick cooking tapioca
    1 c. sugar
    whipped cream or vanilla ice cream
    2 c. water
    pinch of salt
    1 orange
Preparation
    Bring rhubarb to a boil in water.
    Reduce heat; add tapioca, salt, sugar, orange juice and rind.
    Stir until sugar dissolves and rhubarb comes to a boil.
    Cook over low heat until rhubarb is soft and tapioca is cooked.
    Chill.
    Top with whipped cream or ice cream.
