Mexican Chicken - cooking recipe

Ingredients
    1 (3 to 4 lb.) chicken
    1 medium onion, chopped
    8 slices cheese
    3/4 c. crushed corn chips
    1 can cream of chicken soup
    1 can cream of mushroom soup
    1 can Ro-Tel
Preparation
    Simmer chicken in water until tender.
    Remove from water; cool and remove meat from bones.
    Cut chicken into small pieces; place in a greased 2-quart casserole.
    Layer half of onion, cheese and corn chips over chicken.
    Combine soups and Ro-Tel.
    Spoon half of soup mixture over casserole.
    Repeat layering.
    Bake at 350\u00b0 for 45 minutes.
