Green Rice Mold - cooking recipe

Ingredients
    3 c. boiled rice
    2 Tbsp. chopped green pepper
    2 Tbsp. chopped parsley
    1 Tbsp. chopped onion
    1/2 c. oil
    3/4 c. milk
    2 eggs, well beaten
    1 Tbsp. pimento strips
Preparation
    Combine pepper, onion and parsley with rice.
    Mix milk and eggs and add to rice; add oil.
    Pour into well-buttered ring mold. Place in pan of hot water; bake at 350\u00b0 for 1 1/4 hours.
    Invert and fill center with creamed shrimp or mushrooms.
    Garnish with pimento, asparagus, peas, etc.
